Super Easy Chili

 

 1 Onion
 1 tbsp Vegetable Oil
 1 Garlic Clove
 1 cup Textured Vegetable Protien [TVP]
 1 cup Boiling Water
 1 796ml Diced Tomatoes
 1 Dairy-free Tomato Soup
 1 Black Beans
 1 Maple Baked Beans -- Make sure they're Vegan!
 1 tbsp Chili powder to taste
 Salt and Pepper to taste

Set Kettle to boil for TVP. Gather ingredients

Chop onion and garlic. Saute in oil until translucent.

Once water has boiled, take onion mixture off element and add TVP and boiling water. Stir to combine and set timer for 5 minutes.

Open all cans. Drain black beans and rinse if you would like. Once 5 minutes is up, add all canned ingredients and chili powder. Set back on med-high heat and heat until bubbling, then turn heat to low and let simmer for as long as you have time. Adjust seasonings adding salt and pepper to taste.

Note:
- Add sliced mushrooms, chopped celery, carrots, green pepper and frozen corn to the onions if you prefer.
- You can slightly increase the amount by adding another can of diced tomatoes and increasing the TVP and boiling water to 1.5 cups each.

Yield: 4-6 Servings
